Week 1 August Menu Plan

Alright, I know it’s been a little quiet here on Living On Less, life has been very busy, but I figured I better get to work on posting at least my first week’s worth of menu’s for this month. For the month of August, I am challenging myself to make as many of our meals as possible with items that are already in the freezer and pantry.

Menu Plan

1st: Leftovers. I like to make a lot of food, so you will see that every few nights, we will be having leftovers. Tonight’s selection was pizza, chicken, sticky rice, Asian bacon, and hard boiled eggs.

2nd: Cheesy Mini Burgers

3rd: Roasted Chicken. I have a few recipes for roasted chicken, but I think I will be using the recipe from 100 Days Of Real Food, for this chicken. It goes in the crockpot so super easy. I have made chicken stock with the bones and it works perfect.

4th: Chicken Enchiladas. I’ll be using last nights leftover chicken for this.

5th: Nacho’s

6th: BBQ. My baby turns 1 today! We will be having a big BBQ with chicken, steak, some spicy papaya salad and sticky rice.

7th: Leftover’s. I’m positive we will have leftover’s from last night

8th: Halibut

Eat From Your Pantry Challenge!

Okay. So for the last week, I’ve been working on my August menu plan. I’ve decided that my goal for the month of August is to make as many meals as possible with items that are already in my pantry and freezer stockpile. So far, I’ve done really good at deciding what we will be eating, but I did have to make a few exceptions. Our baby girl will be turning ONE (I still can’t believe it!) on the 6th and we are  having a huge BBQ for her so I need to get more meat for that, and for our camping trip that we have planned, I probably need to get a few items that are not already in my pantry. I will have to make an occasional trip to grab fresh produce to add to our meals, and probably for milk and eggs. But NO big, major, grocery shop for me! Yay! I love months like these.

So anyone stocked up and up for the challenge? Can you plan a month’s or maybe even two weeks worth of meals with just items you already have on hand? Let me know if you’re in for the challenge!

I’ll post my menu plan for ya here soon and hopefully a few recipes for you to try!

*UPDATE*

So I thought it’d be fun to share my pantry stockpile with you so you can see why I’ve decided it’s a “eat out of my pantry” month.

Sorry, the bottom shelves were not looking pretty so they got cut out. Those shelves have the kids cereal for easy access, along with babyfood, cake mixes and all my pasta sauces.

This shelf is from Costco. If you are looking for shelves for your stockpile, I highly recommend them. They are big and hold a lot of stuff and the weight capacity is awesome! No worries about the shelf collapsing. I think they were about $60, but worth the investment.

Remember all that gum I posted on Facebook? Well next to the Jif To Go, is all I have left. Hopefully a new sale comes along soon.

So there’s the dry goods. Really sorry but I will not be sharing what our freezer looks like. lol. We have a stand up freezer in the garage that is just as packed as the pantry, but it looks like a coat closet where you just stuff all your junk in. I know exactly what is in there though. We also have a fridge in the pantry/laundry/mud room, so extra freezer space there. Then a third freezer in the kitchen. We were once homeowners,now renters, that’s why we have two fridges by the way. Well that’s my food stock!
